Basic Recipes


The recipes below are easy to follow and memorize so that you will always be able to throw together a quick side dish or homemade vinaigrette. If a weekly recipe calls for a simple salad with red wine vinaigrette, come to this page to refresh your memory on how to quickly whip one up!

Red Wine Vinaigrette

1/4 cup red wine vinegar
3/4 cup extra-virgin olive oil
2 teaspoons honey
1 teaspoon dijon mustard
salt and pepper, to taste

Whisk everything together until well incorporated and slightly thickened. Makes 1 cup.

 

Dijon-Dill Vinaigrette

2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
1/2 cup extra-virgin olive oil
1 tablespoon dill weed
1 tablespoon honey
salt and pepper, to taste

Whisk everything together until well incorporated and slightly thickened. Makes about 3/4 cup.

 

Champagne Vinaigrette

1/4 cup champagne vinegar
3/4 cup extra-virgin olive oil
2 teaspoons dijon mustard
salt and pepper, to taste

 

Whisk everything together until well incorporated and slightly thickened. Makes 1 cup.

 

Simple Couscous

1 1/2 cups couscous
1 1/2 cups chicken stock
1/2 teaspoon salt
1/2 teaspoon black pepper

Bring chicken stock to a boil. Season with salt and pepper and stir until salt is dissolved. Pour stock over couscous in a glass bowl and cover with tightly with plastic wrap. Let stand for 10 to 15 minutes. Uncover and fluff with a fork. 

You can play with the flavors of this simple side dish by adding different herbs and spices to the stock such as saffron, cumin, paprika, etc,. You can also add sauteed veggies, olives, nuts...the sky is the limit.
